You might try pureeing it and then freezing it and then eatting like a popsicle. My 19 month loves to eat cold stuff....even frozen peas.

That's a great idea about the popsicles. When I was fretting over my daughter not eating vegetables, our doctor told me not to worry too much. She said just keep putting stuff on her plate and don't make a big deal out of it, just give her the chance to try it. And eat it myself so she sees it's not bad. I kept doing that (and sometimes my husband had to remind me to relax) and eventually she started eating veggies. She always liked fruit so we were lucky that way. One good thing about fruit is that it's sweet so they can develop a taste for it fairly easily. You might try offering apple pieces and other small bits of fruit as a snack. If they're available, and you don't offer anything else, he should eventually take them. If you have a Farmer's Market in your area, I highly recommend it as an outing for you and your son. It's fun for kids to sample the different fruits and he might find a few favorites. Just try lots of different fruits -- there's bound to be something he likes sooner or later. The fruits my daughter liked early on were pears, bananas, and mango. Now she's a strawberry freak, but because we do an almost weekly run to the Farmer's Market, she will eat just about any kind of fruit. Good luck!
